Two Delicious Recipes Your Holiday Table Will Be Naked Without!

I'm not even hosting the Thanksgiving holiday this year and already it's beginning to stress me out. Why? Because in our family, even though you're not hosting the dinner, you're required to bring with you a delectable side to add to the table. 

Now, that might not seem like a tough task to many, but to me, it's stressful when cooking for a large group of people whose tastes I'm not all that familiar with. Do I go with something easy? A tried and true favorite that even my toddler couldn't mess up in the kitchen? Or do I show off my kitchen prowess, whatever little of it I may have, by whipping up a dish that will be the talk of the table?

Regardless of what I decide to go with, I know that PAM Cooking Spray will be an integral part of the creative cooking process. Too many times I've concocted dishes that have gone awry when I've either forgotten to use PAM or used a different bargain-brand non-stick spray. I cringe just thinking about slicing into that fresh from the oven casserole only to have it baked on and stuck to the sides and bottom of the baking dish. Talk about a face-to-palm moment.

Now that I've decided what I'll  be bringing to the table this Thanksgiving holiday, I want to share with you two of my favorite recipes using PAM Cooking Spray which I hope will become staples at your Thanksgiving or other holiday gathering this year. 

The first recipe, a delicious breakfast casserole, can be personalized with a variety of fillings to fit your family's tastes. Not only does it make for a great make-ahead dish, but it's a casserole than can be enjoyed slowly and casually on Thanksgiving morning or better yet, the morning following, on a day during which no one wants to be cooking in the kitchen. 

The second recipe, a sweet and savory Sweet Potato Spoon Bread, is a recipe that has been in my family for as long as I can remember. Many people enjoy a sweet potato dish at their Thanksgiving table and this delicious concoction was always at ours.



Hearty Breakfast Casserole With Sausage and Potatoes - Serves 6-8

6 Large Eggs
2 lbs. Italian Sausage (Mild, Hot or Sweet)
5 red potatoes, quartered and diced
2 Green Peppers, diced
Salt and Pepper to taste
1 cup shredded cheddar cheese
1 cup milk
1 yellow onion, diced. 
(mushrooms, ham, broccoli, would all make great additions to this casserole)

Preheat oven to 350*

Begin by removing sausage from it's casing. In a large skillet sprayed with PAM over medium-high heat, cook the sausage and onions until the meat is no longer pink and the onions are translucent. Toss in your potatoes and green peppers and cook 5-10 minutes longer. Salt and pepper to taste. Drain well. 



In a 13 x 9 inch baking dish spraying lightly with PAM Cooking Spray, pour meat, onions, potatoes and peppers. In a separate mixing bowl, whisk together eggs, milk and 1/2 cup cheddar cheese. Pour evenly over sausage and potato mixture. Top with remaining cheddar cheese. 

This casserole is best enjoyed refrigerated over night and baked the next morning. If you decide not to let the casserole sit, bake at 350* for 35-40 minutes and enjoy!

Sweet Potato Spoon Bread - Serves 8

4 Large Sweet Potatoes
1/4 cup yellow cornmeal
4 tbsp. unsalted butter
2 cups milk
1/2 cup light brown sugar
1/4 tsp nutmeg
1/4 tsp cloves
1 1/2 tsp cinnamon
1 tsp salt
1/2 cup all-purpose flour
1/4 cup honey
4 Large Eggs

Preheat oven to 400* and bake sweet potatoes until soft. I place them in a baking dish in 1-2 inches of water. Be sure to perforate your potatoes with a knife or fork prior to baking. Bake 45 minutes to 1 hour. Once soft, let cool. Peel and toss away skins. 

Reduce oven heat to 350* In a saucepan over medium heat, combine cornmeal, milk, butter, brown sugar, spices, salt and 1 cup of water. Cook until thickened about 8-10 minutes, stirring occasionally. Set aside and let cool. 

Spray a 2-quart baking dish with Butter PAM Cooking Spray



In a food processor, pour cornmeal mixture, sweet potatoes (cubed), flour, honey and eggs. Pulse until smooth. You might have to do this last step working in separate batches depending on the size of your processor. Once smooth, pour into baking dish. 

Bake until the top becomes a sweet golden brown and begins to crack. Roughly, 55 minutes to an hour. Enjoy!

  11. My husband is the chef, so I am usually stuck with drinks/dishes (which is just fine with me)! BUT, my go-to is always green bean casserole...boring, but delicious. :)
